Fat and fat quality
Fat provides energy and is needed by cells. The type of fat matters: unsaturated fats are generally preferable to saturated fats. The colour for total fat therefore does not tell the whole story.

LAB BAMBA · FOOD & WELLBEING
Ingredients, provenance, preparation and nutritional values make informed choices easier. Your eating pattern, portions and individual circumstances together give context to a single meal.
The colours compare the amounts of fat, saturated fat, total sugars and salt using the British nutrition labelling method. They do not assess disease, allergy safety or individual health.
Green: low · amber: medium · red: high · grey: unknown. Portions over 100 grams may produce a higher classification. Energy, protein and fibre are shown as quantities.
The comparison uses the British nutrition labelling method as a transparent reference. This is not an official Nutri-Score or an individual health score.
| Nutrient | Low per 100 g | High per 100 g | High per portion larger than 100 g |
|---|---|---|---|
| Fat | ≤ 3 | > 17.5 | > 21 |
| Saturated fat | ≤ 1.5 | > 5 | > 6 |
| Total sugars | ≤ 5 | > 22.5 | > 27 |
| Salt | ≤ 0.3 | > 1.5 | > 1.8 |
Values between low and high fall in the medium range. Drinks do not receive dish colours in this version. Missing data is never filled in as zero or green.
UK Department of Health · method and thresholds ↗This explanation concerns nutrition in general. The restaurant menu does not predict an individual's diagnosis, symptoms or treatment outcome.

The menu shows total sugars. These are not the same as free or added sugars. The WHO recommends limiting free sugars; the total sugar figure does not predict an individual's blood glucose response.
High sodium intake from salt is associated with higher blood pressure. The amount per portion helps you place the dish within your overall eating pattern.
Whole grains, vegetables, fruit and pulses provide dietary fibre. Consider variety across your overall diet; a single dish is not a measure of your gut health.
Energy needs vary from person to person. Proteins provide building blocks for muscles and enzymes, among other things. The menu shows quantities; your individual needs require additional context.
The acidity of food is different from the pH of your blood. Some foods can trigger reflux symptoms in some people. That does not make a dish generally ‘acidifying’ for the body.

A coating or thick sensation in the throat does not prove increased mucus production. It does not provide a basis for a reliable mucus score for each ingredient. Recurring symptoms require individual assessment.

Check the allergens present, specific nuts and cereals, and possible cross-contact separately. A green nutrition colour or a vegan recipe does not guarantee that a dish is safe for your allergy.
The restaurant lists all ingredients and sub-ingredients, the supplier, producer where known, country, region, preparation and allergens. DBE reviews the source file before publication. A recipe change withdraws the previous publication until the new version has been reviewed.
Local or organic provenance is not, in itself, evidence of a medical effect. Physical symptoms and medical data are not combined with restaurant, loyalty or Odoo administration.
A research selection of medical centres, retreats and holistic practices. The selection is not a ranking of the largest institutions and does not imply collaboration or endorsement.
Nutrition, sleep, movement, stress, mindful eating and professional guidance remain separate areas. Traditional terms such as Ayurvedic dosha and hot/cold from Chinese traditions are cultural concepts; they are not measurements of the body.
